Mango Chutney Pork Chops


I don't often make pork chops, but I had some in the freezer and decided to try something a little different.  I love mango chutney so after some googling and recipe trolling I combined everything I read into my new favorite pork chop recipe! 

Ingredients
4 pork chops (I used thin cut, but you can use any thickness, just adjust cooking time accordingly)
1/4 C water
1 C Mango Chutney
1/2 C Pineapple juice
3 tsp Curry powder
2 tsp Ginger
1 1/2 Tblsp Rice Vinegar
1 Tblsp Dijon Mustard

Brown pork chops in olive oil.



Once both side are browned, add the water and bring to a boil.  Reduce heat and simmer 5 minutes.
While the chops are simmering, mix together the rest of the ingredients in a bowl.


Pour the chutney mixture over the chops and simmer for 10 minutes (or until the chops are cooked thoroughly)


Serve over rice - I prefer Jasmine or Basmati with this type of curry dish.


I've never made homemade chutney, but I think I might give it a try now that I have a few recipes that call for mango chutney!

'Tis The Season

'Tis the Season for Strawberries & Blueberries that is!!!

There is no better way to start off the summer patriotic holidays than with a dessert plate full of strawberries and blueberries!

It is our favorite summer dessert...well maybe our 2nd favorite...ice cream would be number 1! Other than scooping ice cream into a bowl this plate full of berries is probably the simplest summer dessert!
I simply bake some pound cake or angel food cake (if it's very hot I will cheat and buy some), then bring on the berries!  Top it off with a little whipped cream and you have a refreshing berry-ful dessert!
