Green with Envy

Green Green Green Green!!  Everyone's been shouting the benefits of eating green foods, especially green vegetables.  I do know all the important benefits of vitamins and minerals and I know the basics as to which fruits and vegetables have which nutrients...but I never really knew how great spinach was for your body until I started reading about Green Monsters!  Angela from Oh She Glows has inspired hundreds of recipes for these nutritious green monsters, which are protein-vitamin-mineral packed spinach rich smoothies!

I decided I was ready to join the monster parade.  I was a tiny bit nervous, but everyone sounded so convincing...and they were RIGHT!  I am in love...you don't even taste the spinach!  What a great and simple way to get the nutrients I know I need and it's also very filling.

For my first Monster I followed the basics most recipes shared.  (You can google Green Monster or search on pinterest to find a plethora of recipes!) One of the most common ingredients I've seen is almond milk, but I chose to use coconut milk.  (I think it adds an island flavor!)
I also happened to have strawberries so I tossed them in!




Green Monster #1
1 banana
1 Tbsp peanut butter
4 strawberries
6 oz coconut milk
1 C greek plain yogurt
4 handfuls of spinach


This made 2 smoothies.  I drank this first Green Monster for my lunch.  It did fill me up, but I was hungry by mid afternoon, which is fine because I prefer to eat many small meals/snacks.


I will continue trying different ingredients to create tasty recipes...any suggestions?

  1. I think doing a pineapple flavor would be tasty with your coconut milk.

    1. Stay tuned...I took your suggestion and used some leftover pineapple from Easter - YUM!!
