Quick & Easy Chocolate Covered Strawberries

During my recent trip to the farmer's market I just couldn't pass up the strawberries!  They smelled so good and looked amazing!  (The price wasn't bad either!)

I decided to use some to make chocolate covered strawberries.  Now that I know how easy it is to melt chocolate I realized it would be a quick but special treat! (For a quick easy way to melt chocolate check out my Decadent Chocolate Cheesecake post.)


First thing I did was take the tops off the strawberries so that they could be eaten with a fork.  (I know this is not the most elegant way to make chocolate covered strawberries but it is the most practical for those who do not like to get their hands messy...and no that's not me, I love dirty hands!!)

I melted the chocolate and then used a fork to dip and swirl the strawberries.  I placed them on parchment paper inside a baking pan.  Then placed the pan in the refrigerator for 1 hour.

They didn't look perfect, but that didn't affect the taste!  The strawberries were the perfect sweetness mixed with the chocolate - YUM!

This past week has been SUPER exciting!  I don't even know where to start with my list of highs!

Last week was super busy for me because we were preparing for an exciting surprise 70th birthday party for my Aunt!  This past Saturday we celebrated with all her family and friends! 
It was wonderful to see everyone and to celebrate my wonderful Aunt!

A part of my exciting weekend was my cousin coming "home" from Hawaii to celebrate my Aunt's birthday! I hadn't seen her in 4 years so I was very happy to see her!  
We had a great time catching up and laughing...we tend to laugh a lot when we're together!

I baked!  I haven't baked anything in so long!  I love putting on my apron and turning on that kitchen-aid mixer!  Perhaps I shouldn't say  "I baked"  since it was no bake...either way I was happy to be "baking" again!

Things are starting to bloom!  I guess all those rainy days were worth it.  My rose bush is blooming and the rhododendron is full of color!  I really need to get out there with my camera...

I've spent some time this week getting ready for the Patriotic Link-Up Party I'm doing with Suzy from suzyhomemaker!  I found some super neat fabric at the local farmer's market this week so now I'm looking forward to some fun patriotic projects!
