Farmer's Market Sauté

I absolutely love farmer's markets, well actually any type of market!  I wish we had more open air markets like the old European towns.  During trips to Europe I always plan my adventures around the market days...I'd love to live in a country where I could do all my shopping at a local market!  For now though I will settle for my local Pennsylvania Dutch markets!

The other day I had a fabulous trip to the market.  Everything looked super fresh and the prices were amazing! I just started grabbing everything...I came home with an abundance of produce, but how can you ever have too much?  I decided to make a fresh sauté with a few of my purchases...it was scrumptious so I thought I'd share with everyone!

Farmer's Market Sauté

This can be adapted based on what vegetables you have on hand or your personal preference.
Ingredients
Olive Oil
1 onion chopped in large chunks
4 garlic cloves in large chunks
1 large zuchinni chopped
1/4 -1/2 tsp Cumin
1/4 - 1/2 tsp Adobe Seasoning
1 red pepper chopped

Sauté the garlic and onions in a good amount of olive oil.  You want the pan to be very well coated!


Add the zucchini and seasonings.  Saute over medium heat for 5-10 minutes depending on how thick your pieces are.

Once the zucchini are almost soft add the red pepper.  I only sauteed for another 3 minutes because I like my peppers to still be crunchy.


This is a great summer side dish or main meal served over rice.
