I adapted an original recipe to make these a bit more to my liking and to have a patriotic flare!
Ingredients
1/2C Coconut oil
1/4C sugar
1/2C packed brown sugar
1 egg
1 tsp vanilla extract
1 1/2 C flour
1/2 tsp baking soda
1/2 tsp salt
1C semisweet chocolate chips
Red & Blue Peanut Butter M&M's (you can use any variety)
Combine the oil, sugars, egg and vanilla.
Then add the flour, baking soda and salt. Mix well. Stir in 3/4C semisweet chocolate chips.
Grease or line a baking sheet.
I lined a baking sheet with parchment paper then spread portions of the dough out in rectangles 3" wide.
Add the rest of the chocolate chips pushing them into the cookie dough. Then take your M & M's and push them into the cookie dough.
Bake at 375° for 8-9 minutes.
Let them cool for about 5 minutes, you don't want them to be completely cool when you slice them.
Once the cookies are slightly cool use a pizza cutter to slice them into strips.
Allow the slices to completely cool. I chose to place mine in a mason jar with some chocolate chips in the bottom. (If I had more M&M's I would have used those.) I used some patriotic ribbon to decorate the mason jar add the final patriotic touch!
These cookie sticks didn't last long.
There was some questioning from my other half as to how I made square cookies though!

ReplyDeleteOh there is SO much to do with coconut oil! I try to use it as much as I can when a recipe calls for coconut oil.
